Like most people living in Michoacan in the early 1800's, Hilaria Mendoza struggled to provide for her family. This meant making do with low or no cost ingredients to prepare her family's daily meals.

Hilaria would gather wild tomatillos that grew in the fields between corn and other vegetables to make her salsa. Yes, thery were small and somewhat bitter, but her recipe turned the tomatillos and other ingredients into a salsa that complimented and enhanced the food she served her family.

In the early 1980's, Mina Leon, Hilaria's great-granddaughter, began making salsa with her great-grandmother's recipe, but with two big differences. First, she replaced the wild, bitter tomatillos with quality, great tasting ones and, secondly, she roasted the chiles and tomatillos to enhance their flavor. This gave the salsa a smooth, roasted flavor that no other salsa has.
